Gluten-Free Burst Of Fruit Quinoa / Rice MuffinsUse Organic ingredients whenever possible
Preheat oven to 400 degrees
Grease 24 appetizer size muffin tins
- 4 tbsps - olive oil, safflower oil, butter or ghee
- 4 tbsps - sugar or honey or unrefined sugar
- 2 - large farm eggs
- 1 cup - brown rice flour
- 2 tsps - gluten-free baking powder
- 1 tsp - baking soda
- 1/2 cup - mashed banana or applesauce or yogurt
- 1 cup - quinoa flakes
- 2 tbsps - chopped dried fruits if desired / occasional choc/carob chips for kids big or little / 1 tsp flax seeds / Blueberries with applesauce is a very nice combination / Banana choc chip nut or Banana poppyseed / for a cheezy version - omit mashed banana or applesauce and replace with yogurt & add grated cheese & spices
- Optional - Top each muffin with a whole nut after removing from oven
Beat butter, honey and eggs until very light and fluffy. Gradually add remaining ingredients. Bake 20-25 minutes or until lightly browned. These freeze well - wrap twice.
Gluten-Free Ginger Bread Men
Use Organic ingredients whenever possible
This is a very healthy cookie that is soft & moist even days after baking
- 1/4 cup - sugar or raw sugar - do not use honey
- 1/4 cup - molasses
- 1/8 cup - olive oil
- 1 - free range egg
- 2 tsps - organic ginger
- 1 1/2 tsp - water
- 1 tsp - baking soda - mixed in 1 tbsps hot water
- 1 3/4 cup - white rice flour
- 1/4 cup - brown rice flour
- 1/4 cup - extra / white rice flour to roll on
Cream together butter, oil, sugar, molasses and egg. Add ginger, water and soda in water. Sift rice flours into liquid mixture and mix well.
Chill for 1 hour: Roll with cookie cutters on floured surface. Bake at 400 degrees for 8-10 minutes. Let cool before removing from pan.
Note: These cookies can be dropped instead of rolled but be sure to chill first - otherwise they will spread to much. Decorate as desired. The little bit of sugar is necessary, we have tried them with honey but they crumble. The organic molasses is a real boost of natural iron & organic ginger is so full of flavour. If you love ginger snaps - these will become a favorite.
Gluten-Free Choc Chip Cookies
Use Organic ingredients whenever possible
- 1/4 cup - olive oil
- 3/4 cup - butter or margarine
- 1 cup - brown sugar
- 1 cup - white sugar
- 2 - farm fresh eggs
- 1 tsp - natural vanilla
- 2/3 cups - brown rice flour
- 1 tsp - baking soda
- 1 tsp - gluten-free baking powder
- 1 tsp - xanthan gum
- pinch - sea salt
- 1 cup - quinoa flakes
- 1 cup - coconut
- 1 cup - gluten-free rice krispies [Kinnininnick or Erewhon or Pacific Nutty Rice
- 1/2 cup - choc chips or carob chips or nuts & seeds or raisins, chopped dates, apricots etc
Preheat oven to 350-375 degrees
Cream olive oil and butter until whipped very well
Add sugar and eggs, continue to beat very light
Add brown rice flour, baking soda, baking powder, xanthan gum, pinch of salt, quinoa flakes, gf rice krispies, coconut and optional ingredients - Chill for 1 hourDough should be firm enough to roll into a soft ball [shouldn't stick to your hands except for light film] but won't need to be pressed down. The smaller the cookie the less they crumble.
Place on ungreased cookie sheet and bake for 10-12 minutes until lightly browned. Do not overbake. Cool and wrap lightly.
Ginger Variation: Omit quinoa flakes, coconut and vanilla. Add
- 1 tsp - gr ginger
- 1 tsp - cinnamon
- 1/4 tsp - gr cloves / raisins / nutty rice
Gluten-Free Brown Rice Bread - Bread Maker
Use Organic ingredients whenever possible
If rice flour is not available and you bake a lot with rice flour it is economical to purchase a "Bosch" grinder for freshest available ingredients.Place following 7 ingredients in bread maker pan and whisk well
Note: Do not substitute with actual milk or milk substitute
- 1 2/3 cup - warm water
- 3 - large farm eggs
- 3 tsp - olive oil
- 1 tsp - sea salt
- 2 tbsps - sugar or honey or unrefined sugar
- 1 tsp - cider vinegar
- 1/2 cup - instant skim milk powder or soy
Important: Spoon flour into dry measuring cup - do not pack
Layer in remaining ingredients in order
- 1 cup - organic brown rice flour
- 1 1/4 cup - organic white rice flour
- 2/3 cup - tapioca starch or flour
- 1/3 cup - potato starch
- 1 tbsp - xanthan gum
- 2 tsps - pectin crystals
- 2 tsps - instant yeast
Add on cycle
During first kneading cycle - scrape down sides of pan with rubber spatula. When bread is baked remove from pan and cool on rack
- 2 tbsps - quinoa flakes or flax seeds
Select grain cycle [approx 3-4 hours]
